Servings: 4 to 5 medium thalipeeth

Ingredients:
1 cup bhajani (click here for recipe)
1/2 cup finely chopped onion
2 tbspn chopped coriander leaves
1 tspn sesame seeds
1/4 tspn turmeric powder
1/2 tspn red chilly powder
3/4 tspn salt
water for kneading dough
oil for shallow frying
and
1 small non stick pan with lid

Method:
1. Take bhajani floor in a large plate. Add salt, red chilly powder, turmeric powder, sesame seeds, chopped onion and coriander leaves. Combine everything well.
2. Knead a soft dough with water and make 2 1/2"-3"equal balls. Do not knead the dough too much to maintain the crispness of thalipeeth.
3. Grease frying pan with 1/2 tspn of oil. Put one ball and prees with your palm to roll out. Roll out thin and round thalipith. Make 3-4 holes with your finger. Put little oil in each hole. Spread some oil round it. Wet your hand and then roll out so that it won't stick to your hand.
4. Heat the pan and cover it with a lid. After 5-7 minutes when you will hear a crackling sound ,take off the lid. Cook for another 5 minutes
5. Turn up side down. Put spoon full oil around it. Roast both the sides properly and till crispy.
6. Serve thalipeeth with sweet lemon pickle or with yogurt, homemade ghee or butter.
7. Wipe pan with a wet cloth before making the next thalipeeth.

Tip: You can roll out thalipeeth on plastic sheet. Place it on hot greased pan and then shallow fry in oil. It will help to save your time. Grease plastic sheet before rolling thalipeeth on it.
